When I was younger my dad cooked for us all the time. One of his first jobs when he came to America was a line cook at a local pancake house. For breakfast on the weekends my father would make my sisters and me different kinds of pancakes. He would make us: chocolate, strawberry or banana pancakes and we always loved eating them.
I enjoyed watching my mom and dad cook and would pay attention to how they made their meals in order to replicate it one day for myself. Along with watching my parents cook, I loved watching the food channels on cable TV. I would sit there for hours watching all this delicious food get made and write out the recipes for things I wanted to make later in the week.
When my daughter was born there was a time that I stayed home all day with her and we would spend some time watching these cooking shows and I would say to her “Daddy is going to make that for you one day.” Although the meals did not come out exactly as the ones on the show, they still came out pretty tasty.
Now that my daughter is older and my son is constantly hungry, I have to find ways to make meals that are not as elaborate as the meals I would see on television, but meals that are quick and efficient. I have to make meals that my children will enjoy and will help me keep my sanity at the same time. I know we all love to hear “Is dinner ready yet?” a thousand times, but maybe there is a way to cut it down to 500 or less.
Thanks to our friends at Minute® Rice, I have found a way to cut down the questions with their new Minute Rice Ready to Serve Rice that takes only 60 seconds to cook. This is great because while I am cooking dinner, I do not have to use my rice cooker. I can just pop one of these portion controlled cups into the microwave, remove the film and have it cooking while I get dinner ready.
So what’s for dinner tonight? Tonight is one of my favorite dishes: Chicken tikka masala. This is an easy dish to make and you do not need that many ingredients to make it. Everything I needed I bought at my local Target. There are plenty of varieties to choose from: Brown rice, Basmati rice and Jasmine rice, it just depends on which ones you want to pair with your dish. I chose the white rice variety because it always blends well with the tikka masala sauce.
Alright, now that we got all of our ingredients, let’s get started!
Step 1. I like to chop the the chicken into small 1×1 cubes. This gives us more chicken in our bites and it is easier for my kids to scoop it up.
Step 2. You need to cook the chicken until it slightly browns. You don’t want to over cook it because it will get hard and chewy. Once it’s slightly browned, go to the next step.
Step 3. Add your Tikka Masala sauce. When you add the sauce try to cover up all of the chicken.
Step 4. Stir the sauce into the chicken and let it cook until the sauce starts to boil. Mix it sporadically while you move to the next step.
Step 5. Place your Minute Rice Ready to Serve cup in the microwave. The cup and film, which I removed per instruction, are BPA free. So you do not have to worry about putting it inside the microwave.
Last step is to serve and eat. This meal takes about 20 minutes to cook and when you are a busy dad, it’s a great meal to make while your children are busy watching their favorite show. By the time their show is done, you will have dinner ready and served for them to eat.
